Hello Colleen,
I am happy to hear that you’ll look out for them now. I like them because they are so easy to cook and serve.
I find them in the freezer section of our local grocery store, but during the holidays you can also find fresh ones.

I haven’t thought about Cornish hens in years! I actually haven’t even noticed them at the grocery store either in a long time, but I am sure they are there. It’s almost a gourmet dish from years gone by. Your recipe looks great and I like that you spatchcocked them too. Grocery day is tomorrow, so I am going to make a point of looking for them!
